The long table by the window, set for dinner

Whatever came in this morning.

Ana Ruiz writes the menu at eleven, after the boats come in and Joseph has walked the garden. Most of what you eat travelled less than twenty kilometres. Nothing is flown in; nothing is wasted.

“Cook less, taste more. The bay does most of the work.” — Ana Ruiz, Head Chef
